The first batch of this complex Barleywine was brewed with a four our boil to build depth within the malt character from the melanoidin reactions. Post fermentation we moved the beer to a conditioning tank where we added medium char American oak spirals and Madagascar vanilla beans that were soaked in VSOP Cognac. The beer was aged on the cognac soaked oak and vanilla beans for a month prior to packaging.

– Cognac melds with the Oak and lends to a gentle warming
